The 34-year-old defensive midfielder joined the Hatters in July 2017, after his contract expired with Sky Bet Championship side Brentford.
McCormack had a number of promotions to his name prior to his arrival, including from League Two with Swindon Town and League One with the Bees.
The Irishman has proven his versatility over the years with the likes of Southend and Charlton, playing in both midfield and at right-back while amassing over 450 career appearances before signing for the Hatters.
Marked his Kenilworth Road debut with a stunning volley in the 8-2 opening day victory over Yeovil, a goal that won him the League Two Goal of the Month award for August.
Signed a new one-year deal with the club in May 2018, having made 16 appearances in a first Hatters Town campaign that was interrupted by six months out with injury.
